UV-method for the determination of L-Arginine, Urea and Ammonia
in grape juice, must and wine

Principle:
(microbial glutamate dehydrogenase)
(1) 2-Oxoglutarate + NADPH + NH₄⁺ → L-glutamic acid + NADP⁺ +
H₂O
(urease)
(2) Urea + H₂O → 2 NH₃ + CO₂

(arginase)
(3) L-Arginine + H₂O → urea + ornithine
