Why test for Total Antioxidant Status (TAS) in wine?
Polymeric Phenols are the largest subgroup of these Phenolics. They contribute towards the taste, colour, odour and preservative of the beverage. Evaluating the phenolic content of wine is important, as phenolics appear to account for almost all the antioxidant activity in many beverages.
