Aflatoxins are mycotoxins produced by two species of Aspergillus, a fungus which is especially found in areas with hot and humid climates. Among the 18 different types of aflatoxins identified, aflatoxin B1 is predominant among food products. Aflatoxins have a wide occurrence in different kind of matrices, such as cereals (wheat, barley, rice, corn, etc.), oilseeds (peanuts, almonds, pistachios and other nuts), spices, fruits, vegetables, milk and dairy products and other products of animal origin (meat, eggs, etc.)

The European Union in 2001 set tolerance standards for AFB1 and total aflatoxins for nuts, cereals and dried fruits1. The European Union maximum levels of aflatoxins are laid down in EC No 1881/2006, while directive 2002/32/EC lays down maximum levels for aflatoxins in feed.
